Yellow Gazpacho
4 large yellow tomatoes
½ cup onion, chopped
1 teaspoon fresh ginger, peeled
½ teaspoon curry powder
Dash of allspice
1 Tablespoon fresh lime juice
1 teaspoon brown sugar
½ teaspoon each salt and pepper (or to taste)
Blend everything together and let it sit for at least 2 hours. Chill and serve. Again, if you want it a little thinner in consistency, strain some of the soup through a fine grain strainer and add back to the rest.
